Yummmm...Rhubarb Bars

Rhubarb Oatmeal Bars

Crust

1 1/2 cups flour

1 1/2 cups oatmeal

1 cup light brown sugar

1/4 teaspoon baking soda

1/4 teaspoon salt

1 cup butter or margarine

1/2 cup chopped nuts (optional) I used walnuts

Filling

3 cups cut up rhubarb

1 1/2 cups sugar

2 tablespoons cornstarch

1/4 cup water

1 teaspoon vanilla

Combine crust ingredients until crumbly.  Press half the mixture into a 9 x 13 inch pan.  Reserve rest for topping.

In a saucepan, combine rhubarb, sugar, cornstarch and water.  Cook until clear.

Blend in vanilla.  Pour over crust.

Sprinkle with remaining crumb mixture. 

Bake in 350 degree oven for 30 minutes.
